Snow Peas With Red Peppers

2 tbsp. olive oil or more if needed
1/2 c. green onions, chopped (white part & half-way up green part)
2 tsp. minced garlic
1 c. chopped red pepper
1 1/2 lbs. snap peas or Chinese snow peas, trim ends
1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. lemon juice

In a large skillet, heat oil over medium heat. Add and sauté onions for about 30 seconds. Stir in garlic and red pepper and continue cooking for 2 minutes or until red pepper is slightly soft. Mix in snap peas and sauté until peas are just heated through, about 3 minutes. Stir in salt, pepper and lemon juice. Remove skillet from heat and serve in a serving bowl. Makes 8 servings. |
