Lemon Poppy Seed Bread

1 pkg. (18 1/2 oz.) lemon cake mix
1/2 c. vegetable oil
1 box (3 1/2 oz.) instant vanilla
pudding
4 eggs
1/4 c. poppy seeds
1/2 tsp. lemon extract
1 c. hot water
1/2 c. nuts, chopped

Preheat oven to 350 degrees. Beat the first 5 ingredients together for 4 minutes. Add lemon extract during the last minute. Add hot water and nuts; beat together again. Pour into 2 greased loaf pans. Bake for 35 minutes or until done when tested with a toothpick. Makes 2 loaves. |
