Aunt Florrie's Split Pea soup

2 c. dried, quick-cooking
split peas
1/2 c. chopped carrots
1/3 c. chopped celery
1/4 c. chopped onion
1/2 c. chopped peeled potato
1/4 tsp. thyme
1/4 tsp. marjoram
Dash of cayenne pepper
1 bay leaf
8 c. water
salt to taste
1/4 tsp. celery salt
1/2 tsp. black pepper
3 slices crisp bacon or 1 c. cubed smoked butt

Combine all the ingredients into a large pot; let come to boil and simmer about 1-1/2 to 2 hours.
This makes a thick rich soup. Don't forget the spices listed they give the soup a special flavor.
