Old Fashion Bean Soup

6 c. water
1 lb. navy beans, washed & sorted
8 c. water
2 large meaty, smoked ham hocks or shanks
2 medium carrots, chopped
2 medium onions, chopped
1 large potato, peeled & cubed
2 ribs celery, chopped
1 bay leaf
1 tsp. salt
1/4 tsp. pepper
1/2 c. tomato ketchup

In a large pot bring 6 cups of water to a boil. Add beans and boil for 2 minutes. Remove from heat, cover and let stand for an hour. Drain the beans into a colander. In same pot combine drained beans, 8 cups water, ham hock, carrots, onions, potato, celery, bay leaf, salt and pepper. Bring to a boil. Reduce heat to simmer. Cook the soup for 3 hours or until the beans are tender. Remove bay leaf and ham hocks. Cut meat off of the ham hocks and add into soup. Stir in the ketchup and cook for several minutes. Makes about 10 cups. |
