Mom's Cranberry Sauce

1 1/2 c. sugar
1 large navel orange
1/4 tsp. grated ginger
1 (12 oz.) bag of cranberries 1/4 c. chopped walnuts or pecans (optional)

Grate the peel of the orange. In a medium size saucepan add orange peel, sugar and ginger. Juice the orange and add to the pan. Simmer over medium high heat until sugar is dissolved. Add cranberries, cook until berries pop and come to a boil. Cook for 5 minutes or until sauce thickens. Stir in chopped nuts. Cool completely. Store in refrigerator until ready to serve. Makes about 2 1/4 cups. |
