Green Shamrock Cupcakes
 |
1 3/4 c. flour
1 box of instant pistachio pudding mix, 4 serving size
2/3 c. sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
2 eggs or egg substitute equal to 2 eggs
1 1/4 c. milk
1/2 c. oil
1 tsp. vanilla
Chocolate frosting, canned or homemade
Green miniature marshmallows

Line muffin pans with 18 paper baking cups. In a medium size bowl mix together flour, pudding, sugar, baking powder and salt, set aside. In a larger bowl mix together eggs, milk, oil and vanilla. Stir in dry ingredients until blended. Fill paper cups with batter. Bake in a 375 degree oven for 18 to 20 minutes or until cake tester inserted in cup cake comes out clean. Remove from pans and allow cupcakes to cool on wire racks. Frost cooled cupcakes with chocolate frosting. To decorate cupcakes, cut mini marshmallows in half to create oval shape leaves. Arrange 4 halves onto top of cupcake to make Shamrocks. Makes 18 cupcakes. |
