In medium size bowl, mix together flour, baking powder and salt; set aside. With mixer, cream margarine and sugar together. Beat in egg substitute into creamed mixture. Add and stir in dry ingredients. Fold in amaretto, pecans and cherries. Pour batter into 3 small loaf size pans that have been sprayed with cooking spray and bottom of pans lined with wax paper. Bake in a 350 degree preheated oven for 40 to 45 minuets or until cake tester comes out clean. Remove from pans and cool on wire rack. Makes 3 small breads.
Amaretto Cranberry Bread
Follow recipe instructions above but substitute 1 cup cranberries (fresh or frozen) for the cherries.
