Baked Mash Potato Casserole

5 lb. potatoes, peeled
4 tbsp. butter or margarine
1 1/4 c. cheddar cheese, shredded
1 c. low fat milk
1 c. sour cream
2 eggs or egg substitute
2 tsp. salt
1/2 tsp. black pepper
1 bunch of green onions, chopped (white part & half-way up green part)
2 tbsp. real bacon bits
Topping
2 tbsp. real bacon bits
1/4 c. cheddar cheese, shredded

Coat a 3 qt. shallow casserole dish with cooking spray. Cut potatoes into quarters. Place potatoes in a large pot and cover potatoes with enough water to cover them. Bring to a boil and cook for 20 to 25 minutes until tender. Drain into colander. Return potatoes into pot. Add the butter, cheese, milk, sour cream and eggs. Mash with a potato masher. Mix in the onions and bacon. Spread the potato mixture into the prepared casserole dish. Top with remaining bacon and cheese. Preheat oven to 350 degrees and bake casserole for 40 minutes. Makes 12 servings. |
