Apple Upside Down Cake

1/4 c. margarine, melted
1/4 c. packed brown sugar
1/4 c. sugar
1/2 tsp. cinnamon
1/4 tsp. nutmeg
2 large apples, peeled and sliced
1 tsp. lemon juice
1 tbsp. water
1-1/3 c. flour
3/4 c. sugar
1-1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. low fat dairy sour cream
3 tbsp. salad oil
1-1/2 tsp. vanilla
Egg substitute equal to one egg

Preheat oven to 375 degrees. Pour margarine into 8 x 8 pan. Combine brown sugar, sugar, cinnamon and nutmeg; sprinkle over butter. Toss apples with the juice and water; drain well. Arrange apples in rows on bottom of pan; overlapping slightly. In a bowl mix together flour, 3/4 c. sugar, baking powder and salt; add sour cream, oil and vanilla. Beat for 2 minutes. Add egg and beat smooth. Pour batter over apples. Bake for 35 minutes. Cool 5 minutes and invert pan onto serving plate. Makes 8 servings. |
