Canning requires more work than freezing but is a more reliable form of storage. Certain vegetables, such as pickles and tomatoes, for us just seem to taste best when canned. After you have canned a few dozen pints and quarts the process goes rather quickly and is in no way a burden on you. To us, canning is both therapeutic and fun and the joy of seeing your garden bounty sitting on a shelf in a clear glass jar brings constant pride and satisfaction. Our advice: try canning! It is lots of fun and is a unique form of relaxation for gardeners.
